  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by cutting the Pâte Sucrée dough into 12 pieces, pressing them into tartlet pans, and freezing for 15-30 minutes.
  2. Preheat the oven to 375°F. Prick the shells with a fork, line with parchment paper, fill with pie weights or dried beans, then bake for 10-15 minutes until golden brown.
  3. Make the strawberry jam by cooking chopped strawberries and sugar over medium heat until thickened.
  4. For the pastry cream, simmer sweetened condensed milk, whole milk, and heavy cream; temper egg yolks mixed with cornstarch before combining everything back in the pan and stirring until thickened.
  5. Chill the pastry cream for about two hours.
  6. Assemble by spreading strawberry jam in cooled tartlet shells, piping chilled pastry cream on top, and finishing with halved fresh strawberries.
