  • 1 lb ground beef (or ½ beef + ½ turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for searing)
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt to taste
  • 12 oz linguine
  • 1 tbsp butter
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan
  • Salt & pepper to taste
  • Pasta water (as needed for consistency)

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. In a bowl, mix ground beef, egg, breadcrumbs, Parmesan, parsley, garlic, salt, and pepper until just combined. Form into meatballs (about 20).
  3. Sear meatballs in the skillet until golden brown on all sides (6–8 minutes). Remove and set aside.
  4. In the same skillet, melt butter and sauté minced garlic for 1–2 minutes. Stir in lemon juice and return meatballs to the pan to simmer for 5–7 minutes.
  5. Cook linguine according to package instructions; reserve pasta water. In another saucepan, melt butter, add cream, and Parmesan until creamy. Toss in linguine and adjust with reserved water if needed.
  6. Serve meatballs over creamy linguine with extra sauce drizzled on top.
