  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve the baby potatoes; layer them at the bottom of the crockpot.
  2. Rub chicken breasts with olive oil and seasonings until well coated.
  3. Place seasoned chicken on top of the potatoes.
  4. Pour chicken broth over the ingredients.
  5. Sprinkle minced garlic and grated parmesan on top.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve warm, garnished with fresh parsley if desired.
