  • 1 large bulb of garlic
  • 1.3 kg / 2.8 lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt, and pepper

Instructions

  1. Roast the garlic by drizzling olive oil over the bulb, wrapping it in foil, and baking at 180C/356F for about 50-60 minutes until soft.
  2. Peel and dice the baking potatoes, then boil in salted water until fork-tender (15-20 minutes). Drain and let steam dry.
  3. Mash the steamed potatoes with melted butter, heavy cream, roasted garlic, and Parmesan until smooth. Season with salt and pepper.
  4. Pipe the mixture into swirly shapes on a lined baking tray.
  5. Bake at 200C/400F for 15-20 minutes or until golden brown.
