  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes, seasoning with salt, pepper, and paprika. Cook until golden and fork-tender (about 15 minutes), stirring occasionally. Set aside.
  2. Sear the Steak: Season bite-sized steak cubes with salt, pepper, and Italian herbs. In the same pan, add another tablespoon of oil and 2 tablespoons of butter. Sear the steak in a single layer for 2–3 minutes per side until browned but tender.
  3. Add Garlic Goodness: Reduce heat to medium-low; add remaining butter and minced garlic to the pan. Sauté until fragrant (about 1 minute). Return potatoes to the pan and toss everything together until well combined.
  4. Heat Through & Serve: Cook for an additional 1–2 minutes to meld flavors. Garnish with fresh parsley before serving hot.
