  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional toppings: diced tomatoes, shredded cheddar cheese, fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Pierce each sweet potato several times with a fork and bake on a lined baking sheet for 40-50 minutes until tender.
  2. In a large skillet over medium heat, heat olive oil. Add onion; sauté for 3-4 minutes until softened.
  3. Stir in garlic and bell pepper; cook for another 2-3 minutes.
  4. Add ground turkey to the skillet; cook for about 6-8 minutes until browned.
  5. Mix in spices, corn kernels, and optional diced tomatoes; cook for an additional 2-3 minutes until heated through.
  6. Carefully slice baked sweet potatoes open lengthwise and fluff the insides.
  7. Spoon the turkey mixture into each sweet potato half. If desired, sprinkle with cheese and return to the oven for another 5-7 minutes until melted.
  8. Garnish with cilantro if desired and serve warm.
