  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, whisk together the whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined—do not overmix.
  5. Scoop batter into greased muffin tins or lined cupcake liners, filling each about two-thirds full.
  6. Bake for approximately 18 minutes or until a toothpick inserted in the center comes out clean.
