  • 2 carrots
  • 3 cloves garlic
  • 2 lb jackfruit pieces
  • 1 lb gnocchi
  • 1 cup fresh tomatoes
  • 3/4 cup frozen green peas
  • 6 cups vegetable stock
  • 1/3 cup apple vinegar
  • 3/4 cup whole wheat pastry flour
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • Sea salt + black pepper to taste

Instructions

  1. Sauté diced onion and sliced carrots in a Dutch oven over medium-low heat until onions are translucent.
  2. Add minced garlic and sauté until fragrant. Stir in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar; simmer until vinegar evaporates.
  3. Whisk whole wheat pastry flour into vegetable stock; pour into the pot with jackfruit. Stir in smoked paprika and whole cloves.
  4. Simmer for about 45 minutes until jackfruit is fork-tender.
  5. Add gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float to the top.
  6. Remove thyme sprigs and whole cloves; stir in chopped parsley before serving.
