  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed)
  • 6 cups vegetable stock
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • 1/3 cup apple vinegar
  • Fresh herbs and spices

Instructions

  1. In a heavy-bottomed pot, sauté diced onion and sliced carrots until the onion is translucent.
  2. Add minced garlic and cook until fragrant.
  3. Stir in jackfruit, thyme sprigs, bay leaves, and apple vinegar, simmering until most vinegar evaporates.
  4. Whisk together whole wheat flour with vegetable stock and pour into the pot. Add smoked paprika and whole cloves.
  5. Simmer for about 45 minutes until the jackfruit is fork-tender.
  6. Stir in gnocchi, diced tomatoes, and green peas; cook until the gnocchi float.
  7. Season to taste with salt and pepper before serving.
