  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • Olive oil
  • Fresh herbs (basil, parsley)
  • Breadcrumbs

Instructions

  1. Preheat your oven to 400°F (204°C). Cut bell peppers in half lengthwise, remove seeds, and brush with olive oil. Bake for about 20 minutes until slightly softened.
