  • 800g lean ground beef (or turkey/chickpeas)
  • 20g butter (or olive oil)
  • 1 tbsp minced garlic
  • 100g chopped white onion
  • 75g each red, green & yellow bell peppers
  • 140g light cream cheese
  • 50g shredded mozzarella
  • 240g dry macaroni (whole wheat or chickpea pasta)
  • Fresh parsley for garnish

Instructions

  1. Cook the macaroni in salted water until al dente, reserving 125ml of pasta water before draining.
  2. In a large skillet over medium heat, melt butter. Sauté garlic, onion, and bell peppers for about 4-5 minutes.
  3. Add ground beef to the skillet and cook until browned (about 5-7 minutes). Season with salt, pepper, paprika, and chili flakes.
  4. Reduce heat to low and stir in cream cheese, mozzarella, and cheese slices until melted.
  5. Combine cooked pasta with reserved pasta water in the skillet. Stir until noodles are coated in sauce and garnish with parsley.
