  • 1 medium yellow onion, diced
  • 1 can chili beans, undrained
  • 46 oz tomato juice
  • 4 oz spaghetti or angel hair pasta, broken into thirds
  • 12 Tbs. mild chili powder
  • 1 Tbs. granulated sugar
  • 1 tsp. kosher salt
  • 1 tsp. pepper
  • Shredded cheddar cheese (for garnish)
  • Corn chips (for garnish)
  • Sour cream (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat until no longer pink. Drain excess fat if necessary.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the mild chili powder, then add broken pasta, chili beans, tomato juice, sugar, salt, and pepper. Mix well.
  4. Bring to a simmer on low heat for about 20–30 minutes to meld flavors.
  5. Serve hot topped with shredded cheddar cheese, corn chips, and sour cream alongside warm cinnamon rolls.
