  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Roll the dough into small balls (about 1 inch), shape them into ovals, and press them down gently with a fork.
  6. Bake for about 8–10 minutes until lightly golden around the edges. Let cool completely on a wire rack.
  7. For the filling, beat together more peanut butter and softened butter until smooth; mix in powdered sugar and vanilla until creamy. Adjust consistency with milk if needed.
  8. Spread or pipe the filling onto one cookie and sandwich it with another.
