  • 24 ounces fresh green beans
  • 8 ounces baby bella mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup vegetable oil for frying shallots
  • 1 cup heavy whipping cream
  • 1 1/2 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 medium shallots, halved lengthwise & then sliced thinly into half moons
  • 1 tablespoon garlic, minced or paste
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes, optional
  • 1/4 teaspoon ground nutmeg
  • Kosher salt & freshly ground black pepper, to taste

Instructions

  1. Fry thinly sliced shallots in heated vegetable oil until golden brown and crispy; set aside.
  2. Blanch trimmed green beans in salted boiling water for about 5 minutes; then cool in ice water.
  3. In a saucepan, melt butter and sauté mushrooms and garlic until tender. Add flour to create a roux.
  4. Gradually whisk in chicken broth, followed by lemon juice and seasonings to form a creamy sauce.
  5. Combine the sauce with green beans and half the parmesan cheese; pour into a greased baking dish.
  6. Top with remaining parmesan cheese and crispy shallots; bake at 350°F for about 25 minutes.
