  • 1/2 cup unsalted sweet cream butter (softened)
  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/4 cup unsalted sweet cream butter (softened) for filling
  • 1/2 cup smooth peanut butter for filling
  • 1 1/2 cups powdered sugar for filling
  • 2 tablespoons whole milk for filling
  • 1/4 teaspoon pure vanilla extract for filling

Instructions

  1. Preheat your oven to 350°F (175°C). In one bowl, whisk together flour, baking soda, and salt. In another bowl, cream softened butter and brown sugar until fluffy.
  2. Mix in smooth peanut butter, egg, and vanilla until well combined.
  3. Form small dough balls and roll them in sugar before placing them on a lined baking sheet.
  4. Bake for about 10 minutes until lightly golden around the edges, then cool on wire racks.
  5. Prepare the filling by mixing softened butter, peanut butter, powdered sugar, milk, and vanilla until creamy.
  6. Once cookies are cooled, spread or pipe filling on half of the cookies and top with remaining halves.
