  • 13/4 cups Biscoff cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 16 ounces carrots, peeled and sliced
  • 1/2 cup pure clover honey
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coarse kosher salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix Biscoff crumbs, melted butter, brown sugar, and salt until it resembles damp sand. Press into a 9" pie plate.
  2. Steam sliced carrots until tender (20-30 minutes). Blend with honey, sugars, water, vanilla extract, and salt until smooth.
  3. In another bowl, whisk eggs and heavy cream together. Mix in the carrot puree.
  4. Pour filling into the crust and bake for 45-55 minutes until set. Cool to room temperature before refrigerating for at least four hours.
  5. Serve chilled topped with whipped cream or candied carrot curls.
