Ingredients

Scale
  • 1 (15.25 ounce) box Devil's Food cake mix
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350 degrees F and line two cookie sheets with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, and oil until a soft dough forms. Drop spoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  3. Bake for 8-10 minutes until edges are set but centers remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  4. For frosting, beat butter until creamy; gradually add powdered sugar, vanilla extract, and salt. Fold in vegan marshmallow creme.
  5. To make ganache, microwave heavy cream over chocolate chips for about 45 seconds; whisk until smooth.
  6. Frost cookies with the marshmallow frosting and drizzle ganache on top.
  7. Chill cookies briefly to set the frosting before serving.
