  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley (for garnish)
  • Lemon slices (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red apple vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish; pour marinade over it. Seal or cover and let marinate for at least 30 minutes (ideally 2 to 4 hours).
  3. Preheat your oven to 400°F (200°C).
  4. In a small bowl, mix crumbled feta with a drizzle of olive oil and season with salt and pepper.
  5. Remove chicken from marinade (discard the marinade) and place in a baking dish. Top each breast with the feta mixture.
  6. Bake for 25 to 30 minutes until the chicken is cooked through (internal temperature of 165°F/75°C).
  7. Let rest for 5 minutes before serving garnished with parsley and lemon slices.
