  • 8 chicken thighs
  • ½ head of cabbage, chopped
  • 4 potatoes, peeled and sliced
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix dry rub ingredients. Coat chicken thighs evenly with the mixture.
  3. In a large oven-safe sauté pan, sear the seasoned chicken until browned on both sides. Remove from pan.
  4. Sauté chopped cabbage in remaining fat until slightly wilted.
  5. Add sliced potatoes and onions with chicken stock; stir well.
  6. Return chicken to the pan on top of the vegetable mixture.
  7. Bake for 45–50 minutes until chicken reaches an internal temperature of 165°F (75°C).
