  • 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
  • 1 lb Korean sweet potato glass noodles
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil (divided)
  • 6 tbsp soy sauce
  • 1 tbsp olive oil
  • 3 tbsp brown sugar

Instructions

  1. Cook the sweet potato noodles in boiling water with olive oil for 5-6 minutes until tender yet chewy. Drain and set aside.
  2. In a skillet over high heat, sauté the thin-sliced beef until browned and season with half of the soy sauce, sesame oil, and brown sugar. Set aside.
  3. In another skillet, heat olive oil and sauté carrots and onions until softened. Add garlic, green onions, remaining soy sauce, sesame oil, and brown sugar; cook until fragrant.
  4. Stir in spinach leaves until wilted.
  5. Combine cooked noodles with sautéed beef and vegetables in a large bowl. Serve warm.
