  • 12 tablespoons avocado oil
  • 1 large bell pepper, chopped
  • 1/2 small onion, chopped
  • 1/2 medium orange, thinly sliced
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
  2. Heat avocado oil on medium-high heat in a Blackstone griddle or skillet. Sauté the chopped bell pepper and onion until softened.
  3. Add the seasoned chicken to the skillet and cook until golden brown on all sides.
