  • 2 lbs firm apples (like Gala or Fuji)
  • 10 cups water
  • 2 tablespoons brown sugar
  • 4 inches fresh ginger
  • 2 cinnamon sticks
  • 2 teaspoons black peppercorns

Instructions

  1. Wash and quarter the apples, removing cores without peeling.
  2. For Instant Pot: Combine all ingredients in the pot, cook on high pressure for 18 minutes, then manually release steam. For stovetop: Simmer all ingredients in a stock pot for about 30 minutes until soft.
  3. Strain the mixture through a fine mesh sieve into a pitcher, pressing on the apples to extract more juice.
  4. Allow to cool at room temperature before storing in jars or pitchers.
