  • 1½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup cold unsalted butter, cubed
  • 1 egg yolk
  • ¾ cup granulated sugar (for custard)
  • 1½ cups whole milk
  • 3 large egg yolks (for custard)
  • ¼ cup cornstarch
  • Zest of 1 lemon
  • ½ cup fresh lemon juice

Instructions

  1. To make the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until it resembles coarse crumbs. Add egg yolk and enough cold water to form a dough. Chill for at least 30 minutes.
  2. Preheat the oven to 350°F (175°C). Roll out the chilled dough into your tart pan and prick with a fork. Bake for about 15 minutes until lightly golden. Allow to cool.
  3. For the custard, whisk together sugar, cornstarch, lemon zest, and egg yolks in a saucepan over medium heat while gradually adding milk. Stir continuously until thickened.
  4. Pour the custard into the cooled crust and bake for an additional 20–25 minutes until set but still slightly jiggly.
  5. Cool completely before slicing and serve chilled or at room temperature.
