Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 tablespoon cornstarch
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Prepare the Dough: In a bowl, whisk flour, powdered sugar, and salt. Cut in chilled butter until crumbly. Form into a ball and chill for at least 30 minutes.
  2. Roll and Bake: Preheat oven to 350°F (175°C). Roll out dough to about 1/8-inch thick and cut out circles. Place on parchment-lined baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
  3. Make the Lemon Filling: In a saucepan over medium heat, combine lemon juice, sugar, egg yolk, cornstarch, and zest. Stir until thickened; let cool.
  4. Whip Up the Meringue: Beat egg whites until foamy; add cream of tartar and continue beating to soft peaks. Gradually add sugar until stiff peaks form.
  5. Assemble Cookies: Spoon lemon filling onto each cookie base and top with meringue.
  6. Broil Meringue: Broil cookies for 1-2 minutes until meringue is golden brown; watch closely.
