  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (or plant-based butter)
  • 1 cup fresh lemon juice
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, softened butter, and salt until crumbly. Reserve about one cup of this mixture for topping later. Press the rest firmly into the bottom of your prepared dish.
  3. In another bowl, whisk together lemon juice, granulated sugar, cornstarch, and turmeric powder until smooth. Pour this filling over the pressed crust.
  4. Sprinkle the reserved crumble mixture evenly over the lemon layer and bake for about 38 minutes until golden brown.
  5. Allow to cool completely before cutting into squares.
