  • 1 ball easy pizza dough (or store-bought)
  • 2 tablespoons extra virgin olive oil
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella (or shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven and prepare your pizza dough according to your recipe.
  2. Slice fresh mozzarella into thick pieces if using water-packed cheese.
  3. Shape the dough into a rectangle on parchment paper.
  4. In a jar, combine olive oil, garlic, lemon zest, lemon juice, salt, and pepper; shake until emulsified.
  5. Dimple the dough gently and drizzle the brine over it.
  6. Top with mozzarella pieces and bake on a preheated stone for 8-10 minutes until golden brown.
  7. Once out of the oven, drizzle with fresh lemon juice, sprinkle with parmesan and parsley, then slice and serve.
