  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)

Instructions

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. Toss diced potatoes in olive oil and seasonings (garlic powder, onion powder, smoked paprika, salt, and pepper). Spread on a baking sheet.
