  • 1 pack (8.8 oz / 250g) Lotus Biscoff cookies
  • 1 cup Lotus Biscoff spread
  • 2 cups cold heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk

Instructions

  1. In a medium bowl, whisk the instant vanilla pudding mix with cold milk for about 2 minutes until thickened. Chill in the refrigerator for 5-10 minutes.
  2. In a large bowl, whip the cold heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold half of the whipped cream into the chilled pudding mixture.
  4. Crush three-quarters of the Biscoff cookies into small pieces and set aside some whole cookies for garnish.
  5. Melt the Biscoff spread in short bursts in the microwave until pourable.
  6. Layer crushed cookies at the bottom of your trifle dish or glasses, drizzling melted Biscoff spread over them.
  7. Add spoonfuls of the pudding-whipped cream mixture followed by reserved whipped cream; repeat layers until ingredients are used up.
  8. Finish with whipped cream on top, drizzle remaining melted Biscoff spread, and sprinkle with crushed cookies.
