  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Add chicken pieces along with salt, pepper, oregano, paprika, and cumin; cook until browned (about 5-7 minutes). Remove chicken and set aside.
  2. In the same skillet, add more olive oil and sauté onion and garlic for 3-4 minutes until fragrant. Add bell pepper and cook for an additional minute.
  3. Stir in the rice for about 1 minute to toast slightly. Add drained tomatoes and chicken broth; bring to a simmer.
  4. Return the browned chicken to the skillet; stir gently and cover with a lid. Reduce heat and let it simmer for about 20-25 minutes until rice is tender.
  5. Once cooked, stir in olives and feta cheese; fluff rice with a fork before serving.
  6. Garnish with fresh herbs before enjoying!
