3 tablespoons olive oil
1 medium onion, diced
1 tablespoon garlic, minced
1 cup baby spinach, chopped
1 lb. ground chicken
1/2 cup breadcrumbs
1/4 cup Greek yogurt
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
Sauté onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for an additional 30 seconds.
In a large bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
Shape mixture into approximately eight patties (½ inch thick).
Heat remaining olive oil in a skillet over medium heat. Cook each patty for about 5-6 minutes on each side until golden brown and cooked through.
Drain on paper towels and serve warm with your choice of garnishes.
