  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice or quinoa (or cauliflower rice for low-carb)
  • 1 cup roasted chickpeas (omit for strict keto or paleo)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)

Instructions

  1. Marinate the steak by whisking together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Let it sit in the refrigerator for at least 30 minutes.
  2. Cook the steak on a hot grill or skillet for about 4–5 minutes per side for medium-rare. Allow it to rest before slicing.
  3. Prepare the tzatziki by mixing yogurt (or coconut yogurt), grated cucumber (excess water squeezed out), lemon juice, minced garlic, dill, salt, and pepper; chill until serving.
  4. In a small jar or bowl, combine olive oil, lemon juice, honey (if using), minced garlic, oregano as well as salt and pepper for the vinaigrette; whisk until smooth.
  5. Assemble bowls with your choice of grain base and top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and herbs.
  6. Drizzle with lemon vinaigrette and add tzatziki sauce before serving.
