  • 1 can (14.75 ounces) cream-style corn
  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies (Rotel)
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy cornbread mix
  • 2 eggs
  • ⅓ cup whole milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a cast iron skillet, brown the ground beef over medium heat; drain excess grease.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with chilies, and taco seasoning; cook for about 5 minutes.
  4. Sprinkle 1 cup of cheddar cheese over the beef mixture.
  5. In a separate bowl, combine cornbread mix, eggs, and milk until just mixed.
  6. Pour cornbread batter over the beef mixture evenly.
  7. Bake for 20-25 minutes until golden brown.
  8. Remove from oven; sprinkle remaining cheese on top and bake for another 5 minutes until melted.
