  • 1 tbsp olive oil (for brushing)
  • 250 g Baby Bella Mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup apple vinegar
  • 1 package brie cheese (sliced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Toast in the oven for 3–5 minutes until golden.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute. Add sliced mushrooms and cook until golden brown, about 5–7 minutes. Pour in apple vinegar and simmer until reduced by half; season with salt, pepper, and optional red pepper flakes.
  3. Place a slice of brie on each toasted baguette slice and spoon the mushroom mixture on top. Return to the oven for an additional 3–5 minutes until the brie melts.
  4. Garnish with fresh parsley and serve warm.
