  • 1.5 pounds peeled and deveined shrimp
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add the diced onion and sauté until softened (about 5 minutes). Stir in minced garlic and red pepper flakes until fragrant.
  2. Add orzo pasta and toast lightly for 1–2 minutes. If using, pour in white apple vinegar and scrape any browned bits from the skillet.
  3. Pour in chicken broth along with lemon zest; bring to a boil then reduce heat to simmer for about 10–12 minutes until most liquid absorbs.
  4. Stir in shrimp, cover, and cook until shrimp are pink and opaque.
  5. Remove from heat; stir in Parmesan cheese and heavy cream until creamy.
  6. Finish with lemon juice and parsley; adjust seasoning if necessary.
  7. Serve hot with extra cheese and parsley on top.
