  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 1/2 cups uncooked long grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 1/2 cups chicken broth
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste
  • Chopped green onions or parsley (optional garnish)

Instructions

  1. In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the sliced sausage and sear until browned. Remove from the pan.
  2. In the same skillet, add more olive oil if necessary; sauté the chopped onion for about 5 minutes until translucent.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add the uncooked rice to the skillet, coating it well with the onion-garlic mixture. Toast for 2–3 minutes.
  5. Pour in chicken broth and barbecue sauce; return the seared sausage to the pan.
  6. Bring to a simmer, cover with a lid, and reduce heat to low. Let cook for about 18–20 minutes.
  7. After cooking, let it rest covered for an additional 5 minutes before fluffing with a fork.
  8. Garnish with chopped green onions or parsley before serving.
