Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large non-stick skillet, heat olive oil over medium-high heat. Season cut chicken with salt, pepper, smoked paprika, and garlic powder before adding to the skillet. Sear until cooked through and browned (5–7 minutes). Remove and set aside.
  2. Deglaze the pan with chicken broth, scraping up browned bits.
  3. Stir in honey BBQ sauce and soy sauce; simmer for 2–3 minutes.
  4. Add uncooked penne and enough water to just cover it (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until pasta is tender.
  5. Return chicken to the skillet; stir to combine and adjust seasoning as needed.
  6. Serve garnished with chopped parsley and optional crushed red pepper flakes or shredded cheese.
