  • 1 lb Italian sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and brown until fully cooked. Remove from pot.
  2. In the same pot, sauté diced onions and minced garlic until soft and fragrant.
  3. Stir in drained tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer for about 10 minutes.
  4. Add ditalini pasta to the pot and cook per package instructions until al dente.
  5. Lower heat and stir in heavy cream and Parmesan cheese until melted and combined.
  6. Season with salt and pepper to taste; garnish with fresh parsley before serving.
