  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 2 teaspoons coconut oil (or shortening)
  • 1/3 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk eggs until blended. Stir in melted butter, brown sugar, white sugar, vanilla extract, and optional peppermint extract.
  3. In another bowl, combine flour, cocoa powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Gently fold in semi-sweet chocolate chips.
  5. Pour batter into a greased pan and spread evenly. Bake for about 25-28 minutes or until a toothpick comes out with moist crumbs.
  6. While cooling, melt white chocolate chips and coconut oil together until smooth; pour over brownies.
  7. Sprinkle crushed peppermint candies on top and refrigerate for about 30-45 minutes before slicing.
