  • 0.5 cup fresh or frozen chopped cranberries, thawed

  • 1 teaspoon orange zest

  • 1 tablespoon finely chopped fresh basil
  • 6 ounces baguette-style French bread, cut diagonally into 16 slices
  • Cooking spray
  • 0.125 teaspoon ground pepper
  • 6 ounces brie cheese, cut diagonally into 16 slices

Instructions

  1. In a bowl, mix pomegranate seeds, cranberries, sugar, orange zest, and salt. Cover and chill for up to three days.
  2. Preheat the oven to 350°F (175°C). Arrange baguette slices on a lined baking sheet; lightly spray both sides with cooking spray and sprinkle with ground pepper. Bake for about 8 minutes, flipping halfway through.
  3. Top each toasted slice with brie and return to the oven for an additional 4 minutes until melted.
