  • 8 ounces shiitake mushrooms, thinly sliced
  • 2 tablespoons grated or minced fresh ginger
  • 4 cloves garlic, pressed or minced
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 16 to 20 ounces frozen potstickers (vegetable or chicken)
  • 5 scallions, thinly sliced and divided
  • 3 baby bok choy, ends trimmed off and leaves separated
  • 2 teaspoons toasted sesame oil
  • freshly-ground black pepper
  • optional toppings: chili crisp, toasted sesame seeds, furikake seasoning, fried garlic

Instructions

  1. In a large stockpot, heat 1 tablespoon of olive oil over medium-high heat. Sauté sliced shiitake mushrooms until browned (about 5 minutes), then add minced garlic and ginger, cooking until fragrant.
  2. Pour in the vegetable broth and soy sauce; bring to a gentle boil.
  3. Add frozen potstickers, half of the scallions, and bok choy leaves, stirring gently to combine. Cook for 3-4 minutes until potstickers are heated through.
  4. Stir in toasted sesame oil and black pepper to taste. Adjust seasoning if needed.
  5. Serve in bowls garnished with remaining scallions and optional toppings like chili crisp or toasted sesame seeds.
