  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Prepare the Pulled Beef: Place trimmed beef shoulder in a slow cooker or Instant Pot, layer with sliced onions, and pour ginger beef broth over. For Instant Pot, cook on high pressure for 60 minutes; for slow cooker, cook on low for 6-8 hours until fork-tender.
  2. Cook the Elbow Macaroni: Boil salted water and cook elbow macaroni until al dente per package instructions. Drain and set aside.
  3. Make the Cheese Sauce: In a saucepan, melt butter over medium heat. Stir in flour to form a roux. Gradually whisk in warmed milk until thickened, then add shredded cheddar cheese and stir until smooth.
  4. Combine: Shred cooked beef in the pot, mix with BBQ sauce, cooked macaroni, and cheese sauce until well combined.
  5. Serve: Enjoy hot with extra BBQ sauce on top if desired.
