  • 1 cup unsweetened soy milk
  • 2 teaspoons pure vanilla extract
  • 1/2 cup vegan butter, melted
  • 1/2 cup all-purpose flour
  • 1 1/2 cups brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened soy milk
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch cake pan.
  2. In a large bowl, whisk flour, baking powder, salt, and sugar together.
  3. In another bowl, combine pumpkin puree, oil, soy milk, and vanilla until smooth.
  4. Mix wet ingredients into dry ingredients gently until just combined.
  5. For the streusel topping, mix melted vegan butter, flour, brown sugar, cinnamon, and pumpkin pie spice in a separate bowl until crumbly.
  6. Pour batter into the prepared pan and sprinkle streusel on top.
