  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a mixer, beat room-temperature butter, granulated sugar, and brown sugar until fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients into wet mixture and combine until just blended; do not overmix.
  5. Scoop dough onto prepared baking sheet, spacing them about two inches apart.
  6. Bake for 13-15 minutes until edges are set but centers are soft. Cool on a wire rack.
  7. For frosting, beat cream cheese and softened butter until smooth; mix in vanilla and sifted confectioners' sugar until combined.
  8. Once cookies are cool, generously frost each cookie and sprinkle with cinnamon.
