  • Mini pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt
  • Extra Granulated Sugar for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, whisk egg yolks and granulated sugar until pale. Add pumpkin puree, heavy cream, vanilla extract, cinnamon, ginger, and salt; mix until combined.
  3. If using mini pumpkins, scoop out insides and fill them with custard mixture; otherwise, pour into ramekins. Leave space at the top.
  4. Place filled containers in a baking dish and add hot water halfway up their sides.
  5. Bake for about 30 minutes or until set in the center. Cool at room temperature before refrigerating for at least two hours.
  6. To serve, sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler until golden.
