  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a large bowl, combine the all-purpose flour, rolled oats, packed brown sugar, baking soda, and salt. Pour in the melted butter and stir until well-mixed.
  3. Press about two-thirds of the crumble mixture into the prepared baking dish evenly.
  4. In another bowl, whisk together the pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour this pumpkin mixture over the crumble base and spread it evenly.
  6. Sprinkle the remaining crumble mixture on top of the filling. If desired, add chopped walnuts.
  7. Bake in your preheated oven for about 30-35 minutes or until the top is golden brown and set. Let cool completely before slicing into squares.
