  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and broken graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet with space between each cookie.
  8. Press extra marshmallows and chocolate chips on top before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers are still soft.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
