  • ½ cup pumpkin puree
  • 1 large egg
  • 2 ¼ cups all-purpose flour

  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini vegan marshmallows
  • 8 graham crackers (broken into pieces)
  • Extra ½ cup chocolate chips
  • Extra mini vegan marshmallows
  • Extra crushed graham crackers

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Top each cookie dough ball with extra mini marshmallows and chocolate chips.
  9. Bake for about 12 to 14 minutes until edges are golden but centers remain soft.
  10. Allow cookies to cool briefly before transferring them to a wire rack.
