  • 2 double shots of blonde espresso
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • Cold oat milk, to taste
  • ½ cup warm water
  • 12 cups ice cubes
  • 1 tsp vanilla extract

Instructions

  1. In a small saucepan, combine light brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer on low heat for 2-3 minutes until slightly thickened.
  2. Stir in vanilla extract after removing from heat. Let it cool before storing in an airtight container in the fridge for up to a week.
  3. In a sealable jar, mix one double shot of blonde espresso with 1-2 tablespoons of your syrup.
  4. Add ice cubes to the jar, seal tightly, and shake vigorously for 20-30 seconds.
  5. Pour into your favorite glass without leftover ice, add fresh ice cubes, and top with cold oat milk. Dust with pumpkin pie spice before serving.
