Ingredients

Scale
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • Pinch of cloves
  • 1 1/4 cups pumpkin puree
  • ½ cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup cold butter, cubed
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer, beat together room-temperature butter and pumpkin puree until combined. Add granulated sugar, eggs, and vanilla; mix well.
  4. Gradually add the dry ingredients and milk alternately until just combined—avoid overmixing.
  5. For the crumb topping, mix cold butter, brown sugar, flour, cinnamon, and nutmeg until small crumbs form.
  6. Layer half the pumpkin batter in the dish, sprinkle half the crumb topping on top, then add the remaining batter and topping. Bake for 45-55 minutes or until a toothpick comes out clean.
