  • 140 grams raw sugar (or brown sugar)
  • 110 grams coconut oil (or sunflower oil)
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams wheat flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (approximate amount)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175 degrees Celsius. Grease and flour a small springform pan.
  2. In a large bowl, whisk eggs and sugar until light and frothy. Mix in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup.
  3. In another bowl, sift together flour, baking powder, and pumpkin spice. Gradually add dry ingredients to wet ingredients while stirring gently until just combined.
  4. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil for an additional 20 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the glaze by mixing powdered sugar with milk and maple syrup until smooth.
  6. Once cooled, drizzle or spread the glaze over the cake and enjoy.
